We’ve been having a whole chicken every 2 weeks or so which means making stock and then soup when it’s done. Today it was beef and barley. It would have been better with beef stock, but I thought it was tasty.

Beef and barley soup reminds me of eating scotch broth as a kid. Anyone know where I can get it by the way? I haven’t seen the Campbell’s soup version in stores for a long time. It’s probably for the best, but I do miss it.

This is not quite the same taste as that, but though my recipe needs a little refining before I post it, and it has yet to pass the very important Mr. S test, it really hit the spot.
